2 cups soy or almond milk
1 cup raw cashews (washed)
1 cup chopped dates
2 tbsp egg replacer (optional)
1/2 tsp salt
1 tsp vanilla (optional)
Smart balance or earth balance (for browning in skillet)
Slices of bread
Blend cashews with 1 cup of almond milk until smooth (about 2 minutes). Add dates and blend an additional 2 minutes. Add remaining ingredients (except bread and smart balance) and blend until mixed well. Pour mixture into a large bowl. Dip bread into mixture and brown on both sides in a buttered skillet.
Makes 10-12 servings
