1 16 oz block of extra-firm tofu
½ medium onion
½ bell pepper
2-3 tomatoes
2-3 cloves of garlic, minced
Olive oil
Salt to taste

 

 

Saute onions, bell peppers, and tomatoes with olive oil  in medium sized skillet until tender and most of the juice from the tomatoes has evaporated.  Add garlic.  Using hands, crumble tofu into the skillet. Mix thoroughly.  Cook until the tofu is at the desired firmness.  Salt to taste.
