Scalloped Potatoes

8 cups thinly sliced potatoes
1 onion, cut in rings
1 can coconut milk plus water to = 3 cups total liquid
1 Tbs. onion powder
½ tsp. garlic powder
1 Tbs. salt

1.   Combine milk with seasonings and pour over potatoes in a 9×13″ casserole dish, pressing them firmly into the milk.
2.  Bake covered at 400°F for 1 hour.
3.  Uncover and sprinkle with paprika if desired., then bake another 10 minutes. Serve.
