Charene’s Basic Granola

7 cups quick oats
1 cup whole grain flour (any kind)
1-3 cups coconut
1-2 cups nuts (optional)
1-2 cups seeds, ground or whole (sunflower, sesame, pumpkin)
1 tsp. salt
1 cup raw sugar
1 Tbs. flavoring (vanilla, maple or almond)
1 cup extra virgin olive oil
1 cup water (or more if needed to thoroughly dampen the mix)

 

Mix grains, seeds and nuts in a large bowl.  Mix sugar with dry ingredients.  Blend water, olive oil and flavoring in another bowl. Pour into dry ingredients and mix well with hands.  Spread on to baking sheets and bake at 170 degrees until dry and crispy. Stir occasionally while baking.

Tips for Granola Baking: Baking at a low temperature prevents burning but will take 6-8 hours or longer.  Also, baking at 150-170 degrees seems to work fine.  The granola should be light brown. Never store granola while hot, because condensation may make it soft.

More Tips:

  • Quick oats make tender granola.
  • When mixing granola, rub it in your hands and squeeze it.
  • Little lumps will form that are nice and crunchy.
  • If the mix doesn’t seem damp enough for everything to be moistened just a bit more water.
